Angel Squares

This is a strange little recipe — kind of a cross between a cookie and candy.  The key ingredients is crushed up Oreos.

Angel Squares

6 egg whites
¼ teaspoon salt
2 teaspoons baking powder
1 1/3 cups granulated sugar
1 teaspoon vanilla (my addition)
20 cream filled sandwich cookies, finely crushed (I used 22, because I’m competitive)
1 cup chopped, toasted pecans
1/2 cup semi-sweet or dark chocolate chips. (optional)

Preheat oven to 350 degrees F. Line a 13×9 inch pan with Release foil.

Beat egg whites until stiff. Beat in salt, baking powder, sugar and vanilla. Fold in sandwich cookies, toasted pecans and chocolate chips. Empty into prepared pan and bake for 30-35 minutes. Let cool completely.

Grasp foil, lift from pan, cut into about 24 squares.
