The cookie for this morning is called Oatmeal Cookie Bars with Chocolate Icing. I chose it because it sounded easy, was one I’d never made, and would act as a nice platform for some chopped up leftover Halloween candy I’m trying to get rid of.
These are very good and extremely simple — a quick recipe. Most of the candy on top is peanut butter flavored and I probably should have thrown some peanut butter into the base to string all the flavors together, but the plain butter was fine. Also, I halved the recipe and baked it in an 8×8 inch square pan.

Oatmeal Cookie Bars with Chocolate Icing
1 cup butter
1/2 cup light brown sugar — packed
1/2 cup sugar
2 egg yolks
1 cup all-purpose flour
1 cup rolled oats
6 ounces milk chocolate bars or morsels
2 tablespoons butter
1/2 cup chopped walnuts or 1 cup chopped up stolen Halloween candy
Cream 1 cup butter and sugars until light and fluffy. Beat in egg yolks. Add flour and rolled oats and mix well. Spread in a greased and floured 13x9x2-inch baking pan. Bake at 350° for 20 minutes.
Melt chocolate and butter in microwave. Pour over cookie crust. Sprinkle with with walnuts or chopped up Halloween candy.
