But here’s Protein Peanut Butter Chocolate Chip Cookies got good ratings on allrecipes, but to be safe, I used the allrecipes.com scaling tool and only made 8 of them.
The cookies aren’t terribly sweet and they’re also kind of dry, but the chocolate chips offset the dryness so the cookies are actually pretty decent overall….at least I think.

I was just wondering where you found the protein powder. Mollie Katzen uses it in lots of recipes in “Sunlight Cafe” and I’ve been dying to make her protein bars. Can you tell me what store to check? I checked Whole Foods and couldn’t find anything in the bins…

As for protein powder, my grocery store has it in bulk. I think you might find it in bulk at Sun Harvest or Wild Oats or another regular grocery store that has a bulk section. I don’t recall Whole Foods selling it in bulk, which is not to say they don’t. But if you have to buy a canister of it, it can be found in the area with the weight loss drugs, vitamins and body-building stuff. There’s whey protein powder and soy protein powder. Sunridge is the brand I buy and lately, I’ve been using the vanilla flavored soy. There’s another powder made with whey. I think you can use them both interchangeably, but you might want to check the recipe to see if it specifies either soy or whey.
It makes total sense to bake “healthy” to me. Why expect the cookies to taste the same as those that give you a sugar rush?
After a while your tastebuds will become acclimatized — and in the end your pancreas will thank you.
Dena, I’m glad I took a picture of those because as I look at it, I’m reminded how very good those cookies were. They were healthy tasting — but in a “good” way. They also kept surprisingly well.
