Here’s the pumpkin pie I’m going with.

Pumpkin Pie

It’s got a lot going on and the “care2″ people really enjoyed it.  Plus, it’s from a book called Witch in the Kitchen, which is what Todd finds when he gets home from work every night.  Hardy har har.  I’ve had too much coffee.

Anna, I don’t know if you’ve talked about this before or not. What kind of cookie sheets do you like to bake on, i.e., air-bake, silpat lined, plain.

Hi Cookie Monster,

It really depends on the cookie. I make most of my cookies on an air-bake and very rarely get burnt bottoms. However, the cookies I bake on air-bake sheets (insulated cookie sheets) never seem as crisp as others. So if I am making a cookie that needs to be light and crisp, I use a non-insulated cookie sheet.

I use to line my cookie sheets with a Silpat and every once in a while, I still do. But these days I usually alternate between parchment and non-stick foil.

I made this pumpkin pie last night and it is really good. It is more creamy and at first I wasn’t sure that it was done. It took a bit longer in my oven to set. I didn’t taste the maple syrup at all. I would cool this completely rather than just for the hour that it says to. I liked it much better this morning than last night. Yes, I had a small piece of pie for breakfast. :-)
