I don’t know if I’ll get a chance to make these, but they sound good and rather unique. The intro to the recipe says they are crisp.
Also, someone posted this on Recipezaar and gave it 5 stars.
This makes a ton of cookies so you may want to cut it in half.
Chocolate Mint Snaps
Adapted from the 1983 Southern Living Annual
4 cups flour (ap)
2 teaspoons baking soda
½ teaspoon salt
1 1/4 cups shortening
2 cups sugar
2 eggs
1/3 cup corn syrup
2 1/2 tablespoons water
2 teaspoons peppermint extract
1 teaspoon vanilla
4 ounces unsweetened chocolate, melted and cooled
6 tablespoons sugar for rolling dough in
Preheat oven to 350 degrees F.
Mix together the flour, soda and salt. Set aside.
Cream the shortening and 2 cups sugar. Beat in the eggs, corn syrup, water, both extracts and melted chocolate. Add the flour mixture and stir until mixed.
Form into 1 inch balls. roll the balls around in remaining sugar. Bake for 10 minutes.
Makes 10 ½ dozen

These are my kids favorite cookies. My copy of Southern Living is so tattered but dragged out a few times a year.
