Peach Muffins

I’m posting this recipe by request. I haven’t tried it yet, but it’s adapted (I changed the wording only) from a cookbook called “Celebration” which is a reliable source. If you try these before I do, let me know.

Peach Muffins

1 1/2 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup sugar
2 large eggs
1/2 cup vegetable oil
1/2 teaspoon vanilla
1/8 teaspoon almond extract
1/4 cup roasted almonds, chopped
1 1/4 cups coarsely chopped fresh or drained canned peaches

Preheat oven to 350 degrees. Spray 12 muffin cups with flour-added baking spray or grease well.

In a mixing bowl, thoroughly combine dry ingredients (flour-sugar) and make a well in the center.

In a second bowl, stir together eggs, oil, vanilla and almond extract. Add egg mixture to flour mixture and stir just until moistened. Stir in almonds and peaches. Divide batter among muffin cups and bake for 20-25 minutes.

Makes 12

I tried these the other day, and they were pretty good. They’re perfect for breakfast or just a quick dessert; soft, not too sweet, and easily finished off.
