Oatmeal Toffee & White Chocolate Cookies

Thanks for all the cake tips! I really enjoyed hearing about various “go-to” cake recipes, so if you have a “go-to” cake – something that’s fool proof, crowd pleasing and impressive, feel free to post it in the comment section of this post.

Guinness Stout Cake is definitely my go-to cake. I made the two layers this morning and was impressed by how simple and delicious this cake was. It was so simple I might freeze these layers and make a few more.

As for today’s cookie, it had to be quick. I wanted to make something special for the girl who stands in front of Starbucks giving away puppies. She’s been so friendly and helpful and knows a lot about each dog and its history. I decided to with a recipe from the Hershey’s Test Kitchen, but I changed it up a little just for fun. The white chocolate was a good addition.

Cookies in a Bag

Oatmeal Toffee & White Chocolate Cookies

8 oz unsalted butter, softened
2 eggs
2 cups packed light brown sugar
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1-3/4 cups all-purpose flour
3 cups quick-cooking oats
1-1/3 cups (8 oz. pkg.) Heath bits of brickle toffee bits
1 cup shredded sweetened coconut flakes (optional)
3 oz white chocolate, cut up

Preheat oven to 350 degrees F. Line a couple of cookie sheets with parchment paper

Beat butter, eggs, brown sugar and vanilla until well blended. Beat in baking soda, cinnamon and salt, making sure baking soda is well distributed throughout batter. Scrape bowl and add flour, stirring just until mixed in.

Stir in oats, toffee bits, coconut and white chocolate. Drop dough by rounded teaspoons about 2 inches apart onto prepared sheet.

Bake 10-12 minutes or until edges are lightly browned. Cool 1 minute; remove to wire rack. About 4 dozen cookies

How were the toffee bits after baking? I used to use the heath ones regularly but then they started to turn out kind of chewy/funky. I love toffee and just made some oatmeal cookies, toffee would be yummy with them (actually toffee is pretty good with anything).

Brian, they were chewy/funky. I have to admit, I don’t like toffee bits much in the first place and was trying to get rid of these. They were leftover from the ginger cookies with toffee bits.

The ginger cookies with toffee bits were very good and the toffee was an improvement. These cookies were good too, but the toffee mostly added chewiness and sweetness. I would be just as happy with a different oatmeal cookie.

That said, I think some people really like the chewy texture of toffee bits.

This is about the Levain cookie- in the last levain post you subbed yeast for baking soda- have you tried baking powder? Might the bakers in the show have meant that instead of yeast when they said leavening? (I haven’t read all the copy-cat recipes , so it might have been done already).

Hi Liz,

Yes, we did a baking powder version. It had both baking powder and baking soda. It was pretty good and very close. I just think the yeast version was closer to the original. The original, or at least the one I tried, was incredibly dense.

why is someone giving away puppies on the street? Fort Worth just passed an ordinance against that. i guess the idea is that most people who take home a pet on impulse aren’t prepared to take care of it for the long haul

WAs wondering about the brown bag, where is it from ? any idea where i can buy other cookie/cake funky colourful packages from?

Hi Mona,

I buy those bags from a company called Paper Mart. Paper Mart is very reliable, not too expensive and has all kinds of different bags & boxes. I discovered them a few years via a Google search and have been ordering from them ever since.

TG, funny you should mention that. I was reading the Pet Classifieds the other day and they ask specifically that when trying to sell or adopt-out pets that you place a fee on it to dissuade people with bad intentions.

The people in front of Starbucks are with a great organization called Pawmatch.org. So they are legit and I believe they have ordinances for different parts of Central Texas. One girl told me she drove all the way to Bastrop, set up the puppies, then was asked by the city to leave because they didn’t have a permit. So I’m not sure how that all works, but they are definitely allowed in my neighborhood and in front of Petsmart.

What does a stick of butter weigh? You sometimes use it in measurements and we have a different system in Europe.
