Final Word on Self-Frosting Pineapple Coconut Cake

by on September 3, 2008 · 11 comments

I posted about this cake multiple times — to the point, I suspect, that it became obnoxious.  So here’s the final word.

I thought the cake was too moist, but I don’t like super moist cakes to begin with.  Lots of people like the recipe.  It sort of frosts itself.

If you try the recipe, let me know.

I haven’t had a chance to bake the cashew cookies, but I will tell you how they come out, hopefully this weekend.

Are you sure that recipe for the cake is ‘good’–I clicked on the site and some of the recipes seemed pretty weird with their ratios and ingredients.

I’m glad the cake came out good after all!
The vegan cookies I told you about yesterday from a few posts back were baked today and approved! :)

I absolutely love pineapples!! It looks nice and tropical. The most important thing is taste. How was it on a scale of 1-10?

It looks yummy in all its nuttiness-frosting or not!

Well, Todd liked it. He’s usually honest when it comes to reviews and he didn’t have a problem with the cake. I think I just prefer a different style cake.

Yeah, I liked it, but not as much as this one.

This looks and sounds delicious! I’m glad it finally ended up “frosting” itself when it cooled! :)
