This recipe is based on one from the 2001 Southern Living annual – a book I was supposed to be using to plan a week’s work of menus. I’ve been in a cooking rut and thought making a week’s work of interesting menus would help. It didn’t.
But I did stumble across this cookie recipe and it seemed like a good one for today. The only changes I made from the original were to cut the recipe in half and made a few adjustments to the butter and salt.
My favorite part of these cookies is the Hershey cinnamon chips which are pretty easy to find this time of year. If your store doesn’t carry them, you can order them from Hershey’s website or Amazon.

Chocolate Cappuccino Cookies
8 oz unsalted butter
2 cups brown sugar
2 large eggs
2 3/4 cups all-purpose flour (12.4 oz)
1/2 cup unsweetened cocoa powder (Hershey)
2 tablespoons instant coffee granules or 1 tsp. instant espresso powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 scant teaspoons salt**
1/2 of a (10-ounce) package HERSHEY’S Cinnamon Chips (may use more)
Cream butter and sugar with an electric mixer; beat in eggs.
Combine flour, cocoa, coffee, baking powder, baking soda and salt in a separate bowl and mix well. Stir flour mixture into butter mixture – it will be very thick. Stir in cinnamon chips.
Drop dough by rounded tablespoonfuls, 2 inches apart, onto lightly greased baking sheets.
Bake at 350° for 8 to 10 minutes. Cool on baking sheets 5 minutes. Remove to wire racks to cool completely.
Makes 4 dozen
**If using salted butter, decrease salt to ½ teaspoon

I have been looking for new ideas and ways to use my Cinnamon Chips and these look so good!
Funny, I happen to have 1/2 bag of those cinnamon chips, just kicking around in my pantry, leftover from some muffins I made. Guess I know what to do…

BB, this is a pretty old recipe. You could probably be more inventive if you felt like it, but these are good tried and true cookies.
Hi Amy! Thanks for making the cookies so quickly. A quarter of the original recipe or half of what’s above is actually plenty. It’s such a big recipe. Did you by chance try adding in some chocolate chips? I did, but thought the cookies were better without them.
Katrina, I might try them in scones. Only problem is, there’s no one in the family who really loves scones and scones are best served fresh.
They would be perfect to dunk in my cappuccino! I’ll try to buy the cinnamon chips while I’m there!
Oh, I just snagged a bag of those chips from my mom when I was visiting a week ago! These cookies look like a great way to use them… I’m sure me and my oldest son would love them… not so sure about the other 2 people in my house… but then that would leave more for us!
What world do I live in? I never heard of cinnamon chips until I read this post. I just know my daughter will love this recipe. I’ll be passing it along. Who knows, maybe she will send me a taste. They sound so inviting.

I made these today. I made half with cinnamon chips and half with toffee bits. They both were great, but the toffee ones were the favorite. I guess my family like the cinnamon chips better in oatmeal cookies. Thanks for a new keeper recipe.
This recipe sounds so good! When I got groceries today I made sure to pick up a bag of cinnamon chips, and couldn’t stop eating them out of the bag! I used half the bag to make cinnamon chip muffins for an after school snack (the kids declared them the best muffins ever), and I plan to use the other half to make these cookies for myself… yum!!!
I just restocked my cinn. chip supply. This looks like a cookie I need to try. I’ve been thinking of other ways to use the chips…how about brownies? Maybe a brownie with more milk chocolate.
If these were made without cocoa, how much flour should be substituted? I want to make these for a friend who is sensitive to cocoa and chocolate. Now to order cinnamon chips online…:)
