		<description>I, too, have a new interest in pies.  Neither of my coconut pies that I made for Thanksgiving turned out well (they were my first ever) so I am determined to get it right.  Both recipes were from Emeril.  I looked at your coconut pie recipe in your archives just now and I see that it had a tad more cornstarch than both of my recipes did.  I am definitely going to try my hand at pie making again.  I am looking for the ultimate coconut cream pie with intense coconut flavor in the custard part.  I think I am going to cross some recipes and come up with my own.</description>
