Happy Memorial Day Weekend! I hope you have some fun plans. Ours include play dates, furniture shopping and a day with my family out at Lake LBJ. I’m not sure what to make yet, but I’ve been going through my files and pulling out old favorites that are easy to pack and carry. If you’re looking for easy but good (and fun) recipes for the holidays, here are a few I’ve used over the years. None of these have a red, white and blue theme, but you could easily do the Funfetti cupcakes with red, white and blue sprinkles.

I’m not sure what to make yet either, but I sure am getting a lot of ideas this morning. S’mores cookies sound ideal for Memorial Day, but cupcakes seem to be flirting with me.

Those Temptation Island Cookies still look so good! I can’t believe I haven’t made them yet.
I think I’m going to make something with rhubarb this weekend. We have gorgeous rhubarb!
Those pecan chewies are one of our favorites. I make them often.
Just made Dorie’s White Chocolate Brownies w/raspberries (for TWD). Still baking.
The lemon blueberry bars sound good, too. I have blueberries, but limes not lemons. Hmmm?

I’m leaning towards a key lime pie and maybe something else.
Key Lime Pie is always a hit for us. People always seem so impressed when I say I made it and I always think, “If you only knew how easy it was, you wouldn’t be so impressed!”
Great selection! Those blondies are the bomb; I make them regularly. I almost always have everything on hand, they come together so fast and easy, and they are the best blondie recipe I’ve found. Thanks again!
