Happy Mother’s Day Cream Cheese Danish Muffins

Happy Mother’s Day to all the moms! My gift to you is a photo of the inside of a Cream Cheese Danish Muffin and a tip. If you’re craving a Danish, buy a Danish. If a stiff, slightly dry muffin with a Danish filling and a center that looks like this sounds good, make the muffins.

Cream Cheese Danish Muffin

Fuzz will like these, but I’m kind of disappointed with the texture, as I’d been looking forward to trying this recipe for the past 5 years (or so). Or maybe I did try them and forgot, because they’re kind of forgettable. The recipe is easy, though. No special flour required, no mixer, and you don’t even need a whole block of cream cheese.

P.S. Sorry the photo is kind of yellowy. I was so deflated after cutting into this muffin that I didn’t even bother to drag out the big camera, but rather took a quick shot with the phone.

UPDATE: Fuzz thought these were awesome.

Happy Mother’s Day and thank you so much for all of your wonderful and inspiring blogging (experiments as well as home runs). It’s funny, but I was just thinking about the raspberry danish my grandmother loved so much. Perhaps danish just doesn’t make an ideal muffin?

The funny thing is, I bashed this muffin, but got several compliments on it. They were all from one person, but still…..someone likes them ;).

I always feel weird when that happens–I make something that is ‘meh’ and people love it! I never know whether to be happy or annoyed!
