This is the method I use for making Thai chicken skewers. It was adapted from a popular recipe on allrecipes.com.
Chicken Satay
2 tablespoons creamy peanut butter
1/2 cup soy sauce
1/2 cup lemon or lime juice
1 tablespoon brown sugar
2 tablespoons curry powder

These are pretty good if you don’t mind the texture of reduced fat cookies. The malt flavors pretty strong, which is a good thing.

This recipe was adapted from Rebecca Rather’s. She likes using jelly with her cookies, but I don’t. I never liked it much on peanut butter sandwiches either. Which is not to say I don’t like jelly….I think I like it more with things like pork.
