Thank goodness I’m done with cupcakes. Not that there’s anything wrong with them, but I find them stressful. I needed to get back on track with regular cookies, so I baked up a batch of these for my hairdresser and her co-workers.

Today I tried out a few new frosting recipes. Out of the three I sampled, this one was the best.

Fluffy Truffle Frosting
8 ounces good quality semi-sweet chocolate or chocolate chips
6-8 ounces of heavy cream
1/4 cup dark corn syrup
8 tablespoons butter, softened
1-3 cups sifted confectioners sugar
1-2 teaspoon vanilla
