Butterscotch Blondies

I’ve been craving cookies with lots of oats and nuts lately — specifically, Monster Cookies. However, I already have so many Monster recipes that I decided to try something a little different. Unlike my favorite Monsters (that sounds like a sixties tv show, doesn’t it?), these cookies do not have peanut butter and are baked [...]

Last week during my experiments with glucose syrup, I came across this recipe from the famous Heny Sison culinary school in Manilla. It’s a basic butterscotch bar made with brown sugar, butter, etc., but with the addition of glucose syrup, designed to keep the bars moist and fresh. Saturday I baked a modified half batch of the bars and [...]

This is a more traditional blondie than the dense and rich ones previously posted. The base is lighter and is a good contrast to the big chunks of pecans which in my opinion, are absolutely necessary. I decided to commence testing with Jenn’s butterscotch blondie which she posted in [...]

Happy Belated Butterscotch Brownie Day! And Happy Mother’s Day as well, but I missed National Butterscotch Day and need to touch on that first because one thing yesterday’s holiday brought to my attention was that of the nine recipes I have categorized under “Blondies”, only a couple have a particular emphasis on butterscotch. I need to make more [...]

This one’s from the Blue Diamond nut company. It’s a brown sugar flavored shortbread topped with sliced almonds and butterscotch chips. The shortbread base is thin but very sturdy and makes a good foundation for the mixture of almonds and butterscotch chips. Did you know Hershey makes butterscotch chips? I didn’t, …

Click here for the recipe. I’ve also posted it below. Overall, these are good for a low fat blondie. They have a rich, brown sugar flavor and a nice texture. I don’t think I prefer these over higher fat butterscotch bars (see Hershey recipe below), but they were good for a low fat bar. Butterscotch [...]
