Naturally Thin Oatmeal Banana Cookies is a recipe from Bethenny Frankel from back when she was on The Real Housewives of OC. I really don’t know much about the show tbh, but I do like these cookies and should make them more often.

Naturally Thin Oatmeal Cookies
Naturally Thin Oatmeal Banana Cookies are semi-healthy cookies made with oat flour and rolled oats. If you have a small grinder, you can grind oats and make your own oat flour.
Ingredients
- 1 1/2 cups oat flour
- 3/4 cup rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup raw sugar
- 4 oz banana
- 1 teaspoon vanilla extract
- 1 teaspoon canola oil
- 1/3 cup soy milk
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 375°F.
- Combine oat flour, oats, baking powder, baking soda, salt and sugar in a mixing bowl.
- In a second bowl, mash the banana and stir in oil, soy milk and vanilla.
- Combine all the wet ingredients in a separate bowl. Mix the dry and wet ingredients together, until well combined. Stir in the chocolate chips.
- Use a medium-size ice cream scoop or a large spoon to scoop batter onto a parchment lined baking sheet.
- Bake for 12 minutes or until the cookies appear set.

just made these – super quick and YUMMY! my kids are devouring them! i ground my oats in the food processor… i don’t think they got as fine as they should have, but the cookies have a great texture. thanks for sharing!

I had to try these, so I whipped them up tonight with in 7 minutes. I loved these cookies! Next time I would add 1/4 – 1/2 teaspoon of cinnamon. The recipe made 18 cookies. I also used half white and half chocolate chips. Enjoy! I have a photo on my blog.

Strange, I have been obsessing about these cookies for a few weeks now!
I haven’t made them, because there is another version of the recipe on Health magazine’s website that looks better (i.e. not as low-fat). I can’t figure out how to post a link here but if you google bethenny frankel banana recipe you should find the one on http://www.health.com

Pearl, I think any oats will do. You’re going to grind them into a flour, so it shouldn’t make a difference. I wouldn’t use instant, though. I think they’ve been cooked and dehydrated.
