Ingredients
Crust
¾cupall-purpose flour100 grams
¼cupfirmly packed brown sugar
4tablespoonssalted buttercut up and softened**
Filling
¼cupplus 2 tablespoons sugar
¼cupplus 2 tablespoons light corn syrup
1large egg plus 2 tablespoons beaten egg**
1tablespoonsalted melted butter
¾teaspoonvanilla
½cupchocolate chipsor use a mixture of chocolate and butterscotch chips
½cupcoarsely chopped pecans
Instructions
Preheat oven to 350°F. Line an 8 inch metal pan with nonstick foil or parchment paper.
In a mixing bowl, mix the flour and brown sugar together thoroughly. Add softened butter and mix until uniformly crumbly; press evenly into pan and bake for 12 minutes.
While crust bakes, using the same mixing bowl, whisk together sugar, corn syrup, eggs, salt, melted butter and vanilla. Stir in chocolate chips and nuts.
Pour evenly over hot, partially baked crust. Continue baking for 25 minutes or until set. Cool completely, then chill thoroughly before lifting from pan and slicing.
Notes
For a less sweet crust, you can use 2 tablespoons of brown sugar. Also, if you are using unsalted butter I recommend adding ⅛ teaspoon of salt to the crust.How to Halve an Egg: 2 tablespoons of egg is about ½ of an egg. To get 2 tablespoons, crack the egg into a cup and mix with a fork until white and yolk are uniformly blended. Measure out 2 T. If you prefer, you can just weigh out 25 grams.
