Applesauce Chocolate Syrup Cake is a rich, dense, chocolate cake made with chocolate syrup, applesauce and melted chocolate. Melted chocolate chips also work.

Ingredients

  • 1 ¼ cups (160 grams) all-purpose flour (weigh for best results)**
  • ¼ teaspoon baking soda
  • ½ teaspoon salt decrease to ¼ if using salted butter
  • 3 tablespoons unsweetened cocoa powder (natural)
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup chocolate syrup (210 grams)
  • ¾ cup unsweetened applesauce (185 grams)
  • ¾ cup granulated sugar plus 2 tablespoons (175 grams)
  • ½ teaspoon each vanilla and almond extract (almond is optional)
  • ½ cup mini chocolate chips
  • ½ cup slivered almonds (optiona)

Instructions

  • Preheat oven to 325°F. Grease a 9x5 or an 8 ½ by 4 ½ inch loaf pan and line with a strip of parchment. Grease again, then dust with flour. For mini loaves, preheat to 350F. Grease and flour 3 of them.
  • Whisk together the flour, baking soda, salt and cocoa powder. Set aside.
  • In a mixing bowl, whisk together the eggs, oil, chocolate syrup, applesauce, sugar and extracts.
  • Add the flour mixture gradually, stirring by hand until it is incorporated, then stir in the mini chips.
  • Bake at 325 degrees F for 50 minutes to one hour or until a toothpick inserted comes out clean. Let cool for several hours, then carefully loosen and remove from pan. For mini loaves, bake at 350 for a little over 30 minutes.
  • You can serve the cake the same day, or wrap tightly, freeze and serve on day 2.

Notes

If you don't have a scale, make sure to fluff up your flour and stir it well before measuring.
Old Version: Omit the cocoa powder and use 3 oz of melted semisweet chocolate instead. Reduce sugar to ¾ cup and omit oil. Use ½ cup of softened butter instead of the oil you omitted and cream it with the sugar, then add eggs, applesauce, etc. before stirring in the dry ingredients.
