Preheat oven to 325 degrees F. Spray a 12 cup Bundt pan with flour-added cooking spray.
Cream butter and sugar in a large mixing bowl – a stand mixer works well. Keep beating until very creamy (about 3 minutes), then add pepper, lemon extract. Add eggs, one at a time, beating very well after each addition. Using lowest speed of mixer or by hand, Add flour alternately with cream; mix well.
Pour into the pan and bake at 325F for 70-75 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
Dust with confectioners' sugar if desired. Yield: 16 servings.
