Ingredients

  • 1 box Betty Crocker Super Moist chocolate cake mix (13.25 oz) Devils Food or Butter Recipe Chocolate
  • ¾ to 1 cup Hellmann's mayonnaise (see note) (160 to 200 grams)
  • 1 cup ice cold water (228 grams)
  • 3 large eggs or 2 extra-large or jumbo -- do not use 3 extra -large or 3 jumbo.
  • 2 cans Betty Crocker Chocolate Frosting

Instructions

  • Preheat oven to 350°. Grease and flour two deep 8-inch pans for a taller cake. If using the extra cake mix option mentioned above and in the notes, use the two 9-inch round cake pans.
  • Beat cake mix, mayonnaise, water, and eggs until mixed, then beat with an electric mixer for 4 minutes.
  • Bake 25-30 minutes or until toothpick inserted in centers comes out clean.
  • Let cool on a wire rack 10 minutes. Remove cakes from pans and cool completely.
  • Frost the cake with canned Betty Crocker chocolate frosting.

Notes

The box of cake mix is now a smaller size at 13.25 oz.  To keep the cake pretty much the same, use 3 medium to large eggs (no larger), 1 cup ice cold water,  and only ¾ cup of mayonnaise. Bake cakes in 8x2 inch round pans.
Alternatively, buy a second box of cake mix and add ⅔ cup (3 oz weight) to the recipe, keeping the 3 eggs, 1 full cup of mayonnaise and 1 cup of ice water. This will give you a big, fluffy, 9-inch cake. Also, the extra 3 oz weight of cake mix = 16.25 oz cake mix not 15.25, so there's a little higher ratio of cake mix now, but it worked well for me.
