Bubbe's Famous Brownies

Bubbe's Famous Brownies is a brownie recipe from my friend Amy's grandma. This recipe makes a 9x13 inch pan. For a half batch, use an 8 inch square pan.

Ingredients

  • 2 sticks unsalted butter (230 grams)
  • ¾ cup unsweetened baking cocoa (60-75 grams)
  • 2 cups sugar (400 grams)
  • 4 large eggs (195 grams)
  • 2 teaspoons vanilla or 1 ½ teaspoons vanilla and ½ teaspoon almond
  • ½ teaspoon salt
  • 1 cup all-purpose flour (125 grams)
  • 2 cups semisweet or bittersweet chips or use a mixture of white chips
  • Optional: walnuts peanut butter chips, etc.

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan.
  • Melt butter over medium or medium low heat. Remove from heat, then add the cocoa and stir until smooth. Add sugar and stir until well blended, then stir in the vanilla.
  • Add eggs one at a time, whisking or beating after each egg is added.
  • Stir in the salt until well mixed, then stir in the flour.
  • Make sure the batter isn't so hot that it will melt the chips, then add the chips.
  • Spread batter evenly in pan and sprinkle top generously with nuts.
  • Bake 25-30 minutes. Brownies will be done when a toothpick comes out almost clean.

Notes

To mix things up a bit, I use ½ teaspoon of almond extract and 1 ½ teaspoons of vanilla.
