Easy Cream of Coconut Pie

Ingredients

  • 4 oz cream of coconut (not coconut cream or milk)
  • 2 tablespoons milk or 4 tablespoons rum
  • 7 oz marshmallows (12 big or 2 cups mini)
  • 1 teaspoon vanilla extract
  • teaspoon salt
  • 2 cups heavy whipping cream
  • 1 cup sweetened flaked coconut divided
  • 6 ct ice cream sandwiches
  • Pre-baked pie crust 9 inch homemade or one of the Keebler ready-made crusts. There’s a new one out that’s 9 oz and it worked perfectly

Instructions

  • Prepare the crust if you haven’t done so and have it ready to be filled.
  • In a microwave-safe bowl, combine the cream of coconut, milk (if using) and marshmallows. Stir it all together, coating the mallows with the cream of coconut mixture. Microwave on high, stirring every 30 seconds, until the marshmallows are melted and the mixture is smooth. If you are using rum instead of milk, stir in the rum. Put the bowl in the refrigerator for 1 hour to thicken.
  • In the meantime, toast about ⅓ cup of coconut by laying it on a parchment or foil lined cookie sheet and baking at 350 for about 8 minutes. Sprinkle cooled, toasted coconut over the pie.
  • After 1 hour, whip the cream. With a hand-held or stand mixer, beat the now-slightly-thicker coconut mixture to lighten. Fold in all the whipping cream, then fold in 1 cup of sweetened flaked coconut (if using).
  • Spread a thin layer of the coconut mixture over the pie crust, then arrange the ice cream sandwiches in the pie crust, trimming to fit. You can arrange them spoke-like or however you want.
  • Pile the remaining coconut mixture over the ice cream sandwiches, then sprinkle top with toasted coconut.
  • Freeze for about 3 hours or until pie is firm. Keep frozen until ready to serve. Let stand at room temperature for about 10 minutes before serving, then cut.

Notes

Chill time is approximate. If you are out of marshmallows and have marshmallow creme, you can use that.  The filling will require freezing and be softer.
