Alton Brown's "The Thin"

I asked Todd if he needed any cookies for a football game and since he said NO, I went ahead and just baked a batch of my personal favorite, chocolate chip! I’ve been baking Alton Brown’s Chewy Chocolate Chip cookies for years, but this time I decided to try his thin version. Or as Food TV calls it The Thin.

Alton Brown's The Thin Chocolate Chip Cookies

I didn’t make any changes and The Thin turned out great. They’re not as airy or light as some, but they are thin and if you cook them for the full amount of time, crisp. I think baking them on a non-insulated cookie sheet really makes a difference here. That is, if you want them crisp. Anyway. These are perfect for sitting around on the couch watching TV while all your friends are at the football game.

    hey - i have girls and they would love the hello kitty things. Let me know.
    also, i enjoy Alton Brown but have not yet tried the cookies. they sound yummy.

    AB (the man who should have been my husband) needs to add one more category to his chocolate chip repertoire: FLUFFY!

    My friend made the best chocolate chip meringue bars for a party last week, and they made me think of you, the Queen of the Chocolate Chip Cookie! I haven't made thme myself yet, but I ate FOUR of them at the party, and they were just scrumptious, despite the fact that I usually don't enjoy meringue-y things. Seriously, you should try them! --Gina

    Chocolate Chip Meringue Bars
    (Source: adapted from Junior League of Baton Rouge's River Road Recipes, 1959)

    1 cup shortening (my friend substitutes butter here!)
    1/2 cup brown sugar
    1/2 cup sugar
    3 egg yolks
    1 tablespoon vanilla
    2 cups flour
    1/4 teaspoon salt
    1/4 teaspoon soda
    1-2 cups chocolate chips (my friend used two)

    Cream shortening or butter and the sugars. Add beaten yolks, flour, soda and salt. Spread in a large pan (my friend uses an 11 x 17 jelly roll pan) and sprinkle chocolate chips over the top.

    For the meringue:
    3 egg whites
    1 cup brown sugar
    1 cup walnuts, chopped

    Beat egg whites until quite stiff, then add the brown sugar. Spread over chocolate chip mixture. Sprinkle nuts over the top (my friend leaves one part of the pan peanut-free in case guests don't prefer them). Bake @ 350 for 25 minutes.

    Hi Anna!

    Yesterday I saw the Barefoot Contessa's CCC mix on sale, plus buy one get one free, so I couldn't pass it up. I was curious. When I got home I mixed them right up. I haven't been eating baked goods with wheat for awhile now, but I had to taste these. The texture was excellent the chocolate chunks were very good, but the flavor of the dough was so bland. When I make up the other package I will add some vanilla and salt. These are the very first cookie mixes I've ever purchased. They definitely would not be worth paying full price for. Homemade cookies are truly so much better, and much less expensive but it was a fun experiment, ridiculously easy, and I'm glad I tried it.

    No doubt your AB Thins were much better.

    Poor Clumbsy! I'd DIE without the Food Network!

    I make thin chocolate chippers once in awhile because my BF likes them, but I prefer softer, chewier ones. But I guess that any chocolate chip cookie is a good one, right?

    Debbi,I LOVED Hello Kitty, but since I only have four boys, that would be a little silly for me! (That's one reason I'm sad about not having any girls, no Hello Kitty, no barbies, or dolls. I wanted an excuse to play with those things again. Sigh!)
    Hey, I just posted my to-die-for-if-you-like peanut butter/chocolate cheesecakes. Anna, I want to try them next with pure peanut butter and xylitol and see what I think. I already made them almost as healthy as a pb/choc treat can be.

    Hello Kitty! Hello Anna!
    I love Alton Brown! I've been watching "Good eats" from the internet, since we don't have Food Network here. I saw the one with with the 3 cookies and I think I would love the 3 of them. Basicly I think the texture will depend on the mood you are, isn't it?
    I just got his book about baking too, only made the muffins but I'll "attack" other things soon!
    I'm watching a big soccer game today as well!

    I just saw your cookies with the Hello Kitty in the background just as my daughter brought up her Hello Kitty collection and decided to get rid of it as she has grown out of it. 🙁 She is 11 so I guess it's time. I'll have to make some of these chocolate chip cookies to get over the the Hello Kitty loss. I LIKE Hello Kitty!

    Anybody need any Hello Kitty stuffys? 🙂

    P.S. My husband is SO excited for "his" teams first football game tonight (BYU), but he can only listen to it on the internet. Still, not very fun for me. I like to hear about the game from him, but I couldn't care less about watching or especially listening to it!

    Yum! I'll have to try these someday. I made the chewy once and they totally didn't turn out. Not sure why. I'll have to try all three of Alton's someday.

    Hi Kate,
    Hmmm. They're better to me, but only because I've been craving crisp and thin cookies lately. The big, chewy chocolate chip cookies are probably more impressive to people, but they're different.
