Applesauce Flax Bread
This is a not-too-sweet, slightly healthy bread that's perfect for breakfast or afternoon snacks. It makes 4 mini loaves which you can wrap and freeze or give as little gifts.

whole wheat flour or Fiber Gourmet Blend

flaxseed meal

unsweetened applesauce

honey or maple syrup or keto maple syrup

Instructions
Preheat oven at 350°F. Grease 4 2-cup (3x5 inch) mini loaf pans and line with parchment paper.
Whisk together flour, flax, baking powder, baking soda, salt and cinnamon. Set aside.
In a separate bowl, whisk together applesauce, oil, honey or maple syrup and vanilla.
Add applesauce mixture to flour mixture and stir until fully mixed.
Scrape into the loaf pans. Sprinkle walnuts over the top of each loaf.
Bake loaves for about 30 to 35 minutes or until the edges are very brown.
Let cool for about 20 minutes before loosening from pan. Remove from pan and let cool completely before slicing.
Makes 4 loaves that weigh about 7 oz each
