2tablespoonhigh smoking point neutral oil or extra almond butter

Instructions
Place all nuts in a high-speed blender. Add the oil (or extra almond butter) and salt.
Turn the machine on and quickly bring it to high speed, starting at low and increasing to high.
Blend until the nuts break down into a coarse mixture. Stop as needed and push the mixture down toward the blades.
Keep blending on high, stopping often to scrape or tamp. The mixture will go from crumbly to thick and fluffy before becoming smooth. This takes some patience. A lot of patience.
Once the oils release, the nut butter will become glossy and flow more easily. Blend until completely smooth.
Adjust or flavor. Divide and add sweeteners if desired, or store as-is.
Notes
Roast at 350 F for about 10 minutes or until nuts are brown and deeply fragrant. It may take longer than this, so go buy how the nuts actually look rather than the time listed.
