An excellent salad dressing recipe given to me by Janet. I usually make half a batch and use a small Cuisinart Mini Chopper with tiny holes in it that allow you to pour in the oil and make an emulsion. I also use the smaller amount of oil so my dressing is sweeter and more acidic.
½teaspooneach salt and dry mustard (you can add more if you need to)
½teaspoonpepper
½cupvegetable oil or olive oil
Instructions
Combine all except oil in a mini food processor and process.
While blender is going, slowly add oil in a steady stream. Start with ½ cup and add more to taste. If using olive oil, do not overprocess as that can cause bitterness.
Transfer to a glass jar and store in the refrigerator
