Ingredients

  • 1 cup cassava flour (otto's brand)
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large bananas (350 grams)
  • 3/4 cup coconut sugar (95 grams)
  • 1/2 cup oil or melted pasture butter (120 grams)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup chopped walnuts

Instructions

  • Preheat oven to 350 degrees F. Grease and flour with cassava flour) an 8 1/2 by 4 1/2 inch loaf pan.
  • Whisk together cassava flour, baking powder, baking soda and salt. Set aside.
  • In a mixing bowl, mash the bananas. Beat in the coconut sugar, eggs, oil (or butter) and vanilla. Mix well.
  • Add flour mixture to banana mixture and stir until combined. Fold in nuts.
  • Pour into loaf pan. Bake at 350° for 45 to 55 minutes or until golden brown.
  • Let cool completely.
