4cupsall purpose flour, weigh or measure carefully(500 grams)

2stickssalted butter, softened (228 grams)
2cupsgranulated sugar(400 grams)
4large eggs

8ozcan crushed pineapple, well drained

Instructions
Preheat oven to 325 degrees F. Grease two 9x5 inch metal loaf pans and line with strips of parchment if desired. For taller and narrower loaves, use 8 ½ by 4 ½ inch loaf pans. Bake time will be a little longer.
Whisk flour, baking soda and salt together in a bowl. Set aside.
Cream butter and sugar in a mixing bowl. Add eggs, one by one, beating 30 seconds after each egg. Beat in vanilla and banana. Stir in pineapple.
Stir flour mixture into banana mixture in three parts -- mixing (not beating) with a spoon. Stir in pecans. Transfer to loaf pans.
Bake for 60 minutes or until loaf appears done and a skewer inserted in center comes out with moist crumbs.
