Spicy Icebox Oatmeal Crisps - adapted from Greg Patent’s “Baking in America

2/3 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg (freshly grated if possible)
1/4 teaspoon ground cloves
1/4 teaspoon pepper (I used about 1/8 teaspoon)
8 tablespoons butter, unsalted, room temperature
1 teaspoon vanilla
1 cup firmly packed brown sugar
1 large egg
1 1/2 cups old fashioned or quick cooking oats

Sift together flour through pepper. Beat butter with electric mixer until smooth. Beat in vanilla and sugar. Beat for 2 minutes, then beat in egg. Stir in flour mixture and oats. Place the dough on a large piece of plastic wrap and shape into a log about 9 inches long and 2 inches wide. Wrap log. Chill overnight.

When ready to bake, preheat oven to 350 degrees F. Slice dough into 1/4 inch rounds and place 2 inches apart on parchment or Silpat lined cookie sheets. Bake for 11-13 minutes (keep and eye on them). Cool completely on baking sheet or racks.

Makes about 36 cookies
