National Margarita Day Recipe

Did you know that February 22 is National Margarita Day? When I learned this fun fact years ago I used it as an excuse to make Key Lime Bundt Cake with Margarita Icing. Well, now I just make Austin-style frozen margaritas.

I call them Austin-style because I spent most of my life there and this was a popular style in Austin and San Antonio. This version happens to be from The Junior League of Austin, who take their frozen margaritas seriously. And by that I mean, these are strong. You can adjust tequila and ice to taste.

Austin Style Frozen Margaritas

The Austin Junior League doesn't mess around when it comes to margaritas. These are pretty strong, so feel free to use less tequila. Start with 3 cups of ice and add more as desired. This recipe works well with any blender, but especially well with a Vitamix.

Ingredients
 

  • 1 can frozen limeade (6 oz)
  • 9 oz tequila
  • 2 oz triple sec
  • 3 cups ice to start
  • 2 large limes, cut into wedges
  • coarse slat

Instructions
 

  • Put the first four ingredients in a blender, then add the ice.
  • Blend until smooth.
  • Rub lime wedges around the rim of 6 margarita glasses. Dip in salt.
  • Pour into prepared glass and serve immediately.

    I made this for dessert tonight...sprinkled with orange jimmies for Syracuse basketball. Let's go Orange! But, back to the cake... it's got a beautiful texture, thanks to the beaten egg whites, and it's nice and moist. While I had a bit of a heavy hand with the tequila in the frosting, it's nicely balanced with the flavors in the cake and frosting.

    I made your cooked oatmeal muffins to kick off Lent (even though I don't observe). This cake looks fabulous--although I'd probably be out for the night, if I had it with either a margarita or wine.

    If I could afford to hop on a plane and meet you somewhere for margaritas it would be DONE! I could use one too. I just now (9:45 p.m.) took the strawberry layer cake out of the oven. One of my layers is uneven. 🙁 I have a regular size oven and I guess I shouldn't try three 9 inch layer cakes at a time?

    Thanks for the forewarning! I didn't know there was an official day to drink margaritas! I think this cake PLUS a margarita is the way to go! The icing recipe looks sinful!!!! I wonder how it would taste on brownies? I'll bet good!
