Cuban Style Black Beans

Cuban Style Black Beans and Rice

Cuban Style Black Beans & Rice

1 tablespoon (15 ml) olive oil
1 large onion, chopped
4-5 cloves garlic, minced
½ teaspoon (2 ml) chili powder
¾ teaspoon (3 ml) ground cumin
1 can (14.5 ounce) diced tomatoes with their liquid
3 cups (cooked) black beans, drained**
sea salt, to taste
ground pepper, to taste
chopped, fresh cilantro as a garnish, optional

Heat a large skillet or sauté pan over medium high heat. Add olive oil and heat for about 30 seconds. Add the onion and sauté for 2 to 3 minutes. Add garlic, chili powder and cumin. Continue to sauté for 2 more minutes. Reduce heat to low, add diced tomatoes and simmer, uncovered, 15 minutes. Add beans and simmer 5 minutes longer to heat through. Taste and adjust seasoning with salt and pepper.
Serve beans over pre-made brown or chicken flavored rice with cilantro and if desired, lime wedges.

** To cook black beans, rinse, soak overnight, drain, put in a pot with 6 cups of water (to 1 pound black beans) and simmer with lid half on for 1 ½ to 2 hours. Or just use 2 drained 15 oz cans.

    We eat a lot of black beans in our family! Always looking for different styles. My wife swears by black beans as a natural way to reduce her hot flashes! I'm glad it works out for her this way!

    Sue and Shari, thanks for the feed back! We really liked it too. I ended up mashing the leftovers and spreading them on nachos.

    This particular recipe is based on something I found on the Whole Foods website. I need to remember to go back there and look for more good things!

    I made this for dinner tonight and it was very simple. I mixed the rice right into the bean mixture and had it with grilled chicken. It was a really good, healthy dinner. I might mash some of it up and bake it with some cheese and eat it with chips tomorrow. We have a fair amount of leftovers.

    Thanks for the recipe. We'll make this again.

    Both my husband and son would eat black beans and rice every day if I let them. My husband makes awesome Cuban Black Beans ... might be time to nudge him to make a batch. 🙂

    Glsd you are back and had a great time-I miss a new cookie recipe every day, but I LOVE beans and rice. I am about to make some banana bread for my nieces.

    My 10 year old is getting better at eating whatever I serve, though I know he doesn't really like some of it. My 7 year old wants to be just like his big brother, so he often eats, but if he doesn't it, he complains through it. My 4 year old, he often won't eat a darned bite of dinner! Sam, he is doing pretty good eating most everything I give him. He even eats broccoli! The boys seem to eat a lot of hot dogs, chicken nuggets, pb&j sammies. It depends on their moods. It's amazing how much them knowing if they eat their dinner they get a treat, lets say, a cookie! gets them eating! 😉

    We've been using NutriSource for the puppy since that is what the breeder used, but we'll be gradually moving Gus over to Canidae soon (either that or PureVita). I don't like Science Diet (the ingredient list!) and so far the Vet supports what we've suggested. He is a little biter too, but has been mainly staying with his toys! We've been getting up once around 3am to take him out and then he's good for a couple more hours.

    Joe, I replied on your blog and will reply here as well.

    Lizzie eats Canidae All Life Stages dry. The vet suggested (again) Science Diet, but I am on the fence about that. She seems to be doing fine on Canidae and I like the ingredient list. They did change their formula and will be using slightly less lamb. In some states, I think the new formula is already being sold.

    Sleep issue has gotten better. I can't wait for the biting to stop!

    Count me in as a fan of beans and rice too - kudos for making the beans from scratch!

    I now know what you were going through when you first got Lizzie! Gus, who is currently napping, is sure giving us a workout - it has been over 8 years since we've had to deal with puppy training, so it is all new territory for us again! Have you guys decided on a dog food she really likes?

    Those beans look good. I actually "cheat" now and then and have liked those Uncle Ben's whole grain rice packets that only take about a minute in the microwave! Wish MY kids would eat beans or rice. They are rather picky-we're working through it. My weird kids don't even like mac and cheese, pizza (a little) and number one, they don't like french fries! Where did these boys come from? Really though, that's not such a bad thing.
    I also have a feeling some day I'm going to "complain" that the boys eat too much and I can't keep up!

    Kristen, black beans really are versatile. I don't like beans much, but I love black beans.

    Veggiegirl, we only have a week before school starts. I can't believe summer is almost over.

    Cookie, thanks so much! I am glad you found a good recipe here :). I try ;).

    Sharon, the soaked beans are firmer and have a little more bean flavor (as opposed to salt flavor). I made a full pound and used about 3 cups in this recipe. I saved the rest of the plain beans and will probably use them in my "Houston's Veggie Burger" clone.

    Debbie, I like mine mashed too. I usually mash them, spread them over tortilla chips, sprinkle them with cheese and bake them until the cheese melts.

    I absolutely love black beans 'n rice. I usually take the shortcut with canned black beans, but I'm eager to try soaked beans. I'd imagine they are that much tastier!
