Eggnog Flavored Cheesecake Bars

I have some other things on the agenda for today, including a fun giveaway, but I ran across this recipe and thought I’d put it up here for safekeeping. This is from the Land o’ Lakes test kitchen, where you can find the original version and a photo. I’ve adapted it slightly below in case the link gets changed, but be sure to check the original so you can see the picture. Nobody’s reviewed it yet, so you can be the first!

Eggnog Flavored Cheesecake Bars

Crust:
⅓ cup granulated sugar
½ cup butter, softened
1 ½ cups all-purpose flour
½ teaspoon ground nutmeg (use fresh)

Filling:
½ cup granulated sugar
½ cup eggnog
2 8 ounce packages cream cheese, softened
3 large eggs
1 tablespoon all-purpose flour
⅛ teaspoon ground nutmeg (use fresh)

Preheat oven to 350 degrees F. Have ready an ungreased 13x9 inch pan.

Combine ⅓ cup sugar and butter in large bowl. Beat at medium speed until creamy. Reduce speed to low; add 1 ½ cups flour and ½ teaspoon nutmeg. Beat until well mixed. (Mixture will be crumbly.) Press crust mixture onto bottom of pan and bake for 15 to 17 minutes.

Meanwhile, combine all filling ingredients except nutmeg in same bowl. Beat at medium speed, scraping bowl often, until mixture is creamy. Spread filling over hot, partially baked crust; sprinkle with ⅛ teaspoon nutmeg. continue baking for 28 to 33 minutes or until set. Cool completely. Cut into bars with wet knife. Store refrigerated.

Makes 36 servings

    Ok these do sound really good.

    I have like 3 bottles of that Coffee Mate liquid creamer (egg nog flavor) I wonder if I can make this with the creamer? What do you think?

    We made these back in Jan '08 - they were pretty tasty! I did make a few changes... added rum to the filling and sprinkle the (freshly grated) nutmeg on top instead!

    Hubby and I have been making bars like these for the last few years. Always required bringing when going over to MIL's house.
