Val's Blueberry-Butterscotch Bars

Modified: Aug 7, 2024 · Published: Apr 5, 2007 by Anna · This post may contain affiliate links · 5 Comments

I don't usually post cookie recipes without testing them, but this recipe was created by my friend Val, which means it's good. I plan on making these soon, but I'm taking a cookie break today so they'll have to wait.

Here's the recipe. Val says that the blueberry-butterscotch combination is delicious. If you make these before I do, please send me a picture!

Val's Blueberry-Butterscotch Bars

1 ½ cups flour
½ tsp salt
¼ tsp baking soda
¾ cup butter, softened
1 cup sugar
2 cups blueberries -- (Val used frozen)
½ cup butterscotch chips
2 tbsp brown sugar

Mix flour salt, baking soda, butter and sugar. Fold in blueberries. Press gently but firmly into pan. Mix butterscotch chips with brown sugar and spread over top. Bake at 350 degrees for 30 minutes in a greased 9x13 pan.

I was looking for something different to use up my blueberries and came across your recipe. It was an easy treat--almost sugar cookie-ish with great flavor. Thanks!

What are you talking about Joe???

Okay, just kidding. I put it in. I must have cut it off by accident when I pasted it.

I still need to try the whole wheat blueberry bars Val recommened awhile ago...

I don't see a flour amount though... could you add that in when you get a chance?

hi anna. I just looked in my files to see if I had a picture but couldn't find one. I think that is because they are not too pretty (to be kind). they aren't neat and tidy bars, but they are delicious. and since we usually don't give away any treats, we don't care if they look homely.
