½cupshortening(96 grams)
1cupvery firmly packed light brown sugar
1cupgranulated sugar
2largeeggs
1tsp.vanilla
2cupsoats
1cuprice cereal
1cupflaked coconut
1-2cupspecan halves, toasted and chopped
1cupsemisweet chocolate chips
Instructions
Preheat oven to 325 degrees F. Line two cookie sheets with parchment paper.
Mix together the flour, baking soda and salt in separate bowl.
Beat the butter and shortening until creamy. Beat in the brown sugar and granulated sugar. Cream mixture for about 5 minutes, then beat in the eggs. Continue beating until light and fluffy, then reduce speed and beat in the vanilla.
Gradually add flour mixture to egg mixture, stirring until incorporated, then stir in oats, cereal, coconut, nuts and chocolate chips
Using a cookie scoop, (small or medium) drop balls of dough onto parchment lined baking sheets. Bake at 325 for 12 to 15 minutes or until cookies are lightly brown around the edges. Let cool on baking sheet for 3 minutes, then transfer to a wire rack to finish cooling.
