8-12ouncesfresh spinach or 1 thawed box of frozen spinach
2largeeggs
1cupcottage cheese( 4% or 2%)
¼teaspoonItalian seasonimg
⅛teaspoongarlic salt (or regular salt)--optional
¼teaspoonpepper
¼cupshredded Cheddar or Swiss cheese(I use fat free Kraft cheddar)
1pinchsesame or Nigella seeds
Instructions
Wilt the spinach. Put it all in a large pot, set over medium heat and cook until wilted. Press dry and chop. If using frozen chopped spinach, just thaw and drain.
Stir together eggs, cottage cheese, seasoning, salt and pepper, then stir in chopped spinach.
Divide among individual casserole dishes or put all in one greased 1 quart casserole dish.
Bake uncovered at 350 degrees F for 25-28 minutes. Sprinkle with cheese and seeds bake an additional 5 minutes.
Let cool for about 5 minutes before serving.
Notes
The nutrition counts are from My Fitness Pal and may or may not be accurate. To get the numbers, I used fat free cheddar and 2% milk cottage cheese. Using regular cheddar and 4% milk will increase the fat and calorie count (and overall flavor!). But the lower fat ingredients work well too, so I use them for a lighter lunch.
