Cranberry Spice Golden Raisin Bars
Humble but very tasty, golden brown bar cookies. A great way to use lots of dried cranberries and raisins!

mixed golden raisins and cranberries

vegetable oil (or any neutral oil)

sugar

all purpose flour

baking soda

cinnamon

freshly ground nutmeg

ground allspice

ground cloves

walnut or pecans
toasted and chopped
Instructions
Preheat oven to 375 degrees F. Line a 13x9 inch pan with parchment paper.
Combine the dried fruit and water in a saucepan and bring to a boil. Turn off heat and let stand for 10 minutes. Drain and pat dry.
Pour the dried fruit into a large bowl and add the oil, sugar and egg.
In a separate bowl, whisk together the flour, salt, baking soda and spices.
Add flour mixture to dried fruit mixture and mix well. Stir in the nuts. Spread into pan and bake for about 20 minutes. Let cool before cutting.
