Sorry today’s post is late. I’m in the middle of a cleaning project.
Given all the junk in my house, putting less in my body seemed like a good idea today, so I decided to make something sort of healthy. This recipe is from Heidi Swanson, who makes cookies with natural peanut butter, maple syrup, whole wheat pastry flour and olive oil. I’d hoped these would be good, and they would have been had there not been overwhelming olive oil flavor. So yikes. I’m not sure what happened here, but it seems the “cold-pressed Hojiblanca olives” they use in Central Market’s extra virgin olive oil pack too much of a punch. I might have been safer with Bertolli, but who knows. I’m going to try these again with peanut or coconut oil.
