Oatmeal Gingersnaps

Okay! Enough puppy photos and memes. Here’s today’s first cookie recipe. I made half a batch of these Oatmeal Gingersnaps for Fuzz and her friends, then they yelled at me for taking the cookies outside to photograph. “We don’t like ants in our cookies!” Well, I don’t either, so I took the photograph fast. Thanks for the natural light, Mr. Sun. Now everyone can see that these cookies are thin, crisp, dark and fairly attractive. They have a pretty strong molasses taste and lots of spice, even though there’s no cinnamon.

Oatmeal Gingersnaps

A gingersnap spin on oatmeal cookies -- or vice versa!

Ingredients
 

  • 1 ½ cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • ¼ teaspoon salt
  • ¼ teaspoon ground cloves
  • ½ cup regular or butter flavored shortening
  • 1 cup granulated sugar
  • 1 egg
  • ¼ cup molasses
  • ¾ cup quick-cooking oats
  • Additional sugar for rolling

Instructions
 

  • Preheat oven to 350 degrees F. Line some cookie sheets with parchment.
  • Mix flour, baking soda, ginger, salt and cloves together in a small bowl. Set aside.
  • Cream shortening and sugar in a large mixing bowl. Beat in the egg and molasses. With a mixing spoon, stir in the flour mixture – stir until almost blended, then add oats and stir until fuflly blended.
  • Shape into small (about 1 inch) balls and if desired, roll in sugar. Place 12 to a cookie sheet and flatten slightly with palm of hand or bottom of a glass. Bake for 10 minutes, being careful not to overbake.

    Anna and all,
    I baked these cookies last evening. They turned out great! I added about a half teaspoon of a ginger paste stuff ("Gourmet Garden Ginger Spice Blend") that I had. I like strong ginger flavors. The cookies are chewy, not quite crisp but not soft and cakey either. Perfect for my preferences, anyway. Putting oatmeal in them seemed very odd but I can't really tell it is there with them baked. I just know in my head there is some extra nutrition. I couldn't figure out how you would get 30 cookies out of this small amount of dough. Yep, they are small cookies and I don't think I would want the usual Minnesota big size in a gingersnap.

    Isn't it fun commenting on these old recipes? It's like we've gone back in time and are meeting each other in another in the past. Let me know what you think of these. I'm glad you pointed this recipe out because I've yet to convert it into a printable form.

    4 years after you posted this recipe.... I don't know why I all of a sudden wanted Gingersnap cookies and then I found your recipe with Oatmeal in it... Well, I had to try it. But I did add some extra ginger in the form of that ginger paste that comes in a squeeze tube. The dough is in the fridge chilling, I don't want the cookies to flatten out too much. So we shall see. BY the way, the dough tastes delicious. I think oatmeal in gingersnaps is odd, but I'm all for experimenting.

    I made these this afternoon right after I saw it here. I didn't have any ginger so I used cinnamon...so I guess mine weren't really gingersnaps, but they are yummy! I would make them again definitely.

    These look chewy... but are they? My favorites are chewy cookies. I've never had a gingersnap with oatmeal in it--am definitely going to try this one... even if it isn't chewy. ;o)

    Katrina, I think the kids are just paranoid about ants. Also, they loved the cookies -- all three kids.

    Liz, the other day I picked up a Rachel Ray magazine and saw the dog recipe (fritta!). I have a new appreciation for that magazine, now.
    Based on everything I've been reading about canine nutrition, I do not have any issues feeding the dog people food. I think kibbles are good for their teeth and will continue to add kibble, but because I enjoy making special dog meals, I will continue to do that.

    Veggiegirl, I am taking a lot of photos of Lizzie because puppyhood passes by quickly.
    She's already so big.

    Alicia, I mis-read your comment the first time as "Ants on cookies look really beautiful, especially in the sunlight." I need to read more slowly and carefully.

    Janet, these were really good, but I think the peanut butter krispie ones were slightly better.

    Sharon, maybe you don't have as many ants as we have. No fire ants, though. At least not in our yard.

    I am really enjoying seeing your puppy....she is so cute! And always love your goodies...this one looks great....made the pnb oatmeal rice krispies one and it was hit with my neighbors. Thanks for the new recipe! Oh and I enjoyed reading your "meme" blog.

    Haha, I'd say the same thing as Fuzz and her friends, about taking the food picture outside - who wants ants all over those delectable oatmeal-gingersnaps? ;0)

    About the dog food: my dog lived to be a month over 19 years, and she had people food every day (from home and restaurants), as well as a variety of kibbles over her lifetime. Note for magazine reading- Rachel Ray has a dog recipe in every issue.
