Thin and Chewy Ginger Cookies

Here’s a recipe for all you ginger lovers. They’re not the most attractive cookies, but these chewy ginger cookies will satisfy a ginger craving and are very easy.

Update:  Since posting this I’ve made these several times over the years.  As far as ginger cookies go, these are definitely chewy ginger cookies, but they’re not that pretty.  Then again, they’are not exactly as unattractive as they appear in the old photo I took here!  If you like ginger cookies and are a fan of “chewy”, give these a try.

Chewy Ginger Cookies

3/4 cup unsalted butter, melted
1/2 cup dark brown sugar (3.8 oz)
1/2 cup granulated sugar (3.5 oz)
1/4 cup molasses
1 egg
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups all purpose flour
1 teaspoon ginger
1 teaspoon cinnamon
1/4 cup chopped ginger crystals

In a mixing bowl, combine melted butter, both sugars and molasses. Stir until mixed. Add egg and stir until smooth. Stir in salt and baking soda, followed by flour, ginger, cinnamon and ginger crystals. Chill dough for two hours or in freezer for 20 minutes.

Scoop by rounded teaspoonfuls onto lined cookie sheets and bake at 350 degrees F. for 10-12 minutes or until done.

Makes about 32 cookies
