Lemon Blueberry Tart

I’d wanted to make a lemon dessert for the past two weeks, but couldn’t get my act together. I kept buying lemons, but changing my mind on desserts. I decided to sit back, relax, and let the recipe come to me; and last night, it did. I was reading a Tyler Florence cookbook, turned the page and found the perfect dessert recipe which is also conveniently located on Food TV.

The recipe is for a 10 inch tart pan, but a 9 inch tart pan works too. Just cut the filling in half and make the full amount of pastry dough.

Mine is still cooling, so I’ll post the picture a bit later. It looks fabulous and set perfectly even though it was extremely jiggly when I took it out of the oven. My only complain is that blueberries are $3.50 a pack and a “pack” is less than a cup. Since I wasn’t sure this recipe would be worthy of $10.00 worth of berries, I used frozen, thawed. They worked out well, but make sure you drain them or you’ll have too much moisture.

    Can’t wait to see a picture! Sounds yummy. I’ve been on a lemon kick lately, too. So I’ve made the Sunshine Dream Bars a couple days ago. I also just made the pineapple cheesecake bars. They look delicious! Have a great weekend.

    Just posted the photo. The tart is even better slightly chilled.

    Katrina, we reallv loved the pineapple bars. I think I prefer them over the Sunshine Dream bars, actually…..though I did like those too.

    Do you have Costco near you? Our Costco has blueberries at a pretty good price for a bunch. This looks terribly good. I’ve been trying to think of a lemon dessert to make for tomorrow night. This may work!
