Frosted Marshmallow Brownies

Today’s Frosted Marshmallow Brownies recipe is from The Baking Blonde, who tempted me by mentioning it in the comment section of the chocolate marshmallow cookie post.

These were easy, and the one thing I was concerned about -- spreading the chocolate mixture over the marshmallows without dragging marshmallow, turned out to be a non-issue because the frosting just poured right on. Then again, I probably didn’t let it cool enough because it was a little too free-flowing, and seeped into the marshmallows allowing for blotchy marshmallow tops. Despite the blotchy top, they tasted great and set up perfectly. Next time I’ll let the icing cool a little more, though.

    Lisa, I haven't made these in a while so I can't say. The brownies that I can think of that are very chewy would be the ones with a lot of sugar. The Kitchen Aid mixer brownies are pretty chewy. They are not my personal favorite, but it sounds like you are looking for a very specific texture so their chewy texture might work for you.

    W-O-W. I just ate the icing off of three Sprinkles cupcakes and looking at this picture is pushing my internal sugar-o-meter to eleven!

    Not knowing how the icing on these is supposed to look, I kind of like the "blotchy" tops. Then again, I liked the chocolate all melted together the other day as well. Maybe I'm just a fan of ooey-gooey-ness in my baked goods.

    MMMMMMMMMMMMMMMMMMM, yours look so gooey and chocolatey!
