Key Lime Cookies with Lime Icing

This is a very old recipe for Key Lime Cookies. I first posted it in 2005, and it took me forever to finally update the photo. When updating the photo, I decided that the cookies didn't have enough lime flavor so I added a really tart lime icing along with a suggestion to increase the lime zest to a tablespoon for more lime flavor. Apparently I'm not the only one who likes a lot of lime flavor.

Lime Cookies Texture and Flavor

These are slightly cakey and slightly chewy, leaning toward cakey. This makes them perfect for icing, which I recommend. Without the icing, they are lightly lime flavor and definitely need plenty of white chips or white chocolate. With the icing, you can go easier on the white chips or leave them out completely.

Lime Icing Recipe

This is one of a handful of icing recipes I actually enjoy making. It's simple because you just mix everything together in a microwave-safe bowl or better yet, a 2-cup Pyrex. To make it, you start by melting only a teaspoon of butter. You can use a little more if you like, but all you need for opaqueness is the 1 teaspoon. You then mix in some zest and powdered sugar, at which point it will still be dry. And then the fun starts! Just add fresh lime juice a spoonful at a time, stirring until nice and smooth.

Lime Oil

If you really love lime flavor, it's good to have a bottle of lime oil on hand. These cookies are fine without it, but a tiny drop will ramp up the lime flavor. I use Boyajian brand, which I store in the refrigerator.

Iced Lime Cookies with White Chocolate

Key Lime Cookies

Key Lime Cookies are key lime flavored cookies with white chips. Chunks of white chocolate may also be used.

Ingredients
 

  • 1 stick unsalted butter, softened (114 grams)
  • 1 cup sugar (200 grams)
  • 1 large egg
  • 1 large egg yolk
  • 1 ½ cups all-purpose flour (195 grams)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup fresh lime juice
  • 1 ½ teaspoons lime zest (or up to 1 tablespoon)
  • ¾ cup white chocolate chips

Lime Icing

  • 1 teaspoon butter
  • ½ teaspoon lime zest
  • 1 cup powdered sugar, lightly spooned (110 grams)
  • 3 tablespoons fresh lime juice

Instructions
 

  • Preheat oven to 350 degrees F.
  • Beat the butter and sugar until creamy. Beat in the egg and egg yolk.
  • Mix together the flour, baking powder, salt, lime juice and lime zest. When well mixed, stir in the white chocolate chips.
  • Roll dough into walnut sized balls and arrange on ungreased baking sheets spacing about 2 ½ inches apart.
  • Bake at 350 degrees F for 10-12 minutes. Let cool on the baking sheet for 3 minutes, then transfer to a rack to finish cooling.

Lime Icing

  • In a microwave-safe bowl or a 2-cup Pyrex measure, melt the butter.
  • Add the lime zest and the powdered sugar to the melted butter, stirring well. It will be powdery and moist.
  • Add the lime juice 1 tablespoon at a time, stirring until smooth enough to drizzle or spread. You can use all lime juice, but I recommend taste testing and if too lime-y for you, you can use less lime juice and a little milk. I like using all lime juice.

Notes

Yield is just a ballpark.
