Oatmeal Cookie Bars with Chocolate Icing

Oatmeal Cookie Bars with Chocolate Icing. These sound kind of odd, but they were (are, they still are) actually pretty good. This batch was photographed during the "baked goods floating in the air" era. I like how the caption is just the camera I used at the time.

Oatmeal Cookie Bars with Chocolate Icing

1 cup (8 oz) butter, salted (room temperature)
½ cup packed light brown sugar
½ cup sugar
2 egg yolks
1 cup all-purpose flour
1 cup rolled oats
6 ounces chopped milk chocolate bars or morsels
2 tablespoons butter
½ cup chopped walnuts or 1 cup chopped up stolen Halloween candy

Preheat oven to 350 degrees F.  Grease and flour a 9x13 inch pan.  You may want to line it with foil and then grease the foil.  This makes cutting a bit easier.

Beat 1 cup butter and sugars until light and fluffy. Beat in egg yolks. Add flour and rolled oats and mix well. Spread in a pan and bake at 350° for 20 minutes or until it appears set.  Let the crust cool completely.

Melt chocolate and butter in microwave using 50% power and stirring every 30 seconds. Pour over cookie crust. Sprinkle with with walnuts or chopped up Halloween candy.  Allow the chocolate to set either at room temperature or in the refrigerator, then cut into bars.
