Too hot to bake? Cool off with a no-bake classic that’s as fun to assemble as it is to eat. Heath Bar Ice Cream Sandwich Cake isn’t exactly new. We've been making it for years, but I gave this last one a twist by using crushed toffee bars -- both Skor and Heath!

Heath vs. Skor Bars
Heath and Skor Bars are both toffee bars made by Hershey. The Skors are a little more elusive than the Heath, but you can usually find them at Walgreens. So what's the difference? Skor is darker and has a more intense caramel flavor. Heath Bars taste like nothing at first, then the flavor hits and its sweeter and maybe more buttery. It's hard to pick a favorite. Skor seems to soften a little more when added to whipped cream. None of this matters as far as ice cream sandwich cakes go, but I thought it would be fun to compare the two.

How to Make Ice Cream Sandwich Cake
To make a basic ice cream sandwich cake, you take a casserole dish or pan and line it with ice cream sandwiches. Add a layer of whipped cream, some crushed candy and repeat. Freeze until firm, then serve straight out of the pan with whipped cream. That's it. The standard size is 9x13, but I love scaling recipes up or down and using whatever size dish works.

Tips for Making More Complicated
I also seem to love overcomplicating this dessert. It's meant to be simple, but it's almost impossible not to want to embellish it or make it your own. Here are some things I've done and/or that you can do.
- Make a loaf pan version and incorporate extra ice cream.
- Make your own fudge sauce.
- Make your own ice cream sandwiches, though I don't really recommend it because the commercial ice cream sandwiches soften just right.
- Make homemade whipped cream sweetened cream.
- Concoct some sort of mousse-like thing with instant pudding mix and layer that between the ice cream sandwiches. Linking to the Kraft version, but I've made this one too and it's good.
- Make an ice cream sandwich version of an iconic Chicago cake, Atomic Cake.

Heath Bar Ice Cream Sandwich Cake
Ingredients
- 1 tub whipped topping (8 oz), more or less to tasted
- 6 whole Heath Bars, crushed
- 30 large ice cream sandwiches (you may only need 24 depending on the exact shape and size of your dish)
- ⅓ cup homemade or store bought sundae sauce
Instructions
- Cover the bottom of a 9x13 inch pan with ice cream sandwiches (12 or 15), trimming to fit.
- Add a layer of whipped topping, then half of the crushed toffee bars.
- Repeat with a second layer of ice cream sandwiches, whipped topping and crushed bars.
- Freeze until firm. Serve with a drizzle of hot fudge or chocolate sauce.
