Easy Pumpkin Soup with Curry

Easy Pumpkin Soup with Curry is a recipe I usually only make during the fall. It's a lighter pumpkin soup that gets its creaminess from the pumpkin and evaporated milk. Honey brings out the sweetness of the pumpkin.

Easy Pumpkin Soup with Curry

½ cup chopped onions
1 tablespoon butter plus 1 tablespoons olive oil
2 tablespoons all-purpose flour
1 teaspoon curry powder ( I used red)
3 cups vegetable broth
1 can pumpkin -- (15 ounce)
1 can evaporated milk -- (12 ounce)
1 tablespoon honey
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon ground nutmeg

In a large pot, sauté onions in butter/oil mixture until tender.

Add flour and curry powder and mix until blended.

Gradually add the broth. Bring to a boil; cook, stirring constantly, for 2 minutes or until thickened.

Add the pumpkin, evaporated milk, honey, salt, pepper, and nutmeg; cook until heated through.

Makes about 6 cups

    Cindy, I hope your lentil soup works out. I keep coming across new recipes for it, but I am so addicted to Kristin's Ginger Lentil Soup that I end up making that one.

    Sue, you seem to analyze things like I do. I think you are right about that.

    Cakespy, curry and pumpkin are great together! Try this soup and you'll see what I mean.

    Emiline, I've been eating tortilla soup all week long. It's one of my favorites too. I don't like the rich, greasy kind, though. I like it it tomato based, slightly sweet with lots of southwest spices, tortillas, chicken (for protein)and sometimes beans (for more protein).

    I love pumpkin soup. It sounds really good. I've been digging the soup lately. Chicken tortilla, especially.

    I love curry and pumpkin. I never would have thought of that combo...hopefully eating something with a kick will draw you out of the monotone mood! But I think your writing was still sparkling...

    Have you ever seen the show on TLC, called "What Not to Wear"? My daughter watches it when she's home on break. I think sometimes the guests on their show have wardrobes that reflect the way they're feeling about themselves.

    Maybe your soup is a reflection of the way you're feeling?

    Make something bright, happy, and colorful!

    I don't care for curry, but I have a recipe for lentil soup I want to try next week!
