There are a lot of recipes for peanut butter cookies stuffed with more peanut butter, but what about chocolate cookies stuffed with peanut butter? Those exist too, and this recipe (aptly titled Peanut Butter Stuffed Chocolate Cookies), which I posted back in 2006, is still a favorite.

Peanut Butter Stuffed Chocolate Cookies became popular and other people have since changed the recipe by using all butter. I still use half shortening because the shortening butter combo gives you a cookie that’s thin and kind of bendy, yet still strong enough to hold the peanut butter filling. If you use only butter, the cookies may get a little too thin without the addition of more flour which dries them. So I recommend using half butter and half Spectrum (a good brand of shortening).

I made a small batch of these today just so I could take new photos. They came out just the way I like them -- soft and with a bend. To get that texture, I used the shortening and butter (as mentioned), a combination of King Arthur flour plus a little White Lily and an insulated baking sheet (AirBake). If you don’t have one, try stacking a cookie sheet on a smaller rimmed baking sheet to create your own level of air. That always works for me. And of course don’t overbake.

Peanut Butter Stuffed Chocolate Cookies
Ingredients
Peanut Butter Filling
- ½ cup creamy peanut butter (64 grams)
- ⅓ cup powdered sugar (35 grams)
Chocolate Dough
- 1 cup all purpose flour (125 grams)
- ⅓ cup unsweetened natural cocoa powder (30 grams)
- ½ teaspoon baking soda
- ⅜ teaspoon salt
- 4 tablespoons unsalted butter, room temperature (56 grams)
- 4 tablespoons shortening (48 grams)
- ½ cup granulated sugar (100 grams)
- ⅓ cup firmly packed light brown sugar (70 grams)
- ½ teaspoon vanilla extract
- 1 large egg
- ⅔ cup semi-sweet chocolate chips (the minis are best) (114 grams)
Instructions
- Preheat oven to 350 degrees F. Line 2 large cookie sheets with parchment paper.
- Prepare filling first. Mix together peanut butter and powdered sugar. Drop marble size balls of peanut butter mixture onto a waxed paper lined plate and set in freezer. This is to help make the peanut butter balls more manageable.
- Stir flour, cocoa powder, baking soda and salt together in a mixing bowl. Set aside.
- In a large mixing bowl, beat butter, shortening and both sugars together using with an electric mixer. Beat until creamy, scraping sides of bowl; beat in vanilla. Add egg and beat until it is mixed in. Add flour mixture and stir with a mixing spoon until most of flour is incorporated. Add chips and continue to stir until remaining flour mixture is incorporated. If dough seems very sticky, chill it for about a half hour (it shouldn’t be too sticky).
- Using a rounded tablespoon, scoop up mounds of dough and wrap each mound around one of your little blobs of peanut butter mixture. Seal the peanut butter ball in the dough the best you can and place on cookie sheet spacing about 2 inches apart. Bake one sheet at a time for about 12 minutes.
- Let cookies cool on sheets for 3 minutes, then lift with a metal spatula and set on wire racks to cool and set.
- Makes 18 cookies

Hm...I've made something that I would imagine to be similiar , only they were cresent shaped and that dough was fine with no shortening ... None the less these look really good!
