Peanut Butter Cookies with Honey Roasted Peanuts (and no jelly!)

This recipe was adapted from one by Rebecca Rather, aka “The Pastry Queen”. She likes using jelly with her cookies, but I don’t. I never liked it much on peanut butter sandwiches either, which is not to say I don’t like jelly….I think I like it more with things like pork.

Peanut Butter Cookies With Honey Roasted Peanuts (and no jelly!)

1 1/2 cups (3 sticks) butter
1 1/2 cups smooth peanut butter
1 1/2 cups granulated sugar
1 1/2 cups dark brown sugar
3 large eggs
1 tablespoon vanilla extract
3 cups all purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 cup honey-roasted peanuts, coarsely chopped

Preheat oven to 375 degrees. Cream butters, sugars, egg and vanilla. Mix dry ingredients and stir into peanut butter mixture. Stir in peanuts. Scoop into golfballs size balls and place 2 inches apart on ungreased lined cookie sheets. Bake for 10-12 minutes.

Note: Chilling the dough helps the cookies bake up a little thicker.
