Today’s recipe is from The Baking Blonde, who tempted me by mentioning it in the comment section of the chocolate marshmallow cookie post.
These were easy, and the one thing I was concerned about — spreading the chocolate mixture over the marshmallows without dragging marshmallow, turned out to be a non-issue because the frosting just poured right on. Then again, I probably didn’t let it cool enough because it was a little too free-flowing, and seeped into the marshmallows allowing for blotchy marshmallow tops. Despite the blotchy top, they tasted great and set up perfectly. Next time I’ll let the icing cool a little more, though.

W-O-W. I just ate the icing off of three Sprinkles cupcakes and looking at this picture is pushing my internal sugar-o-meter to eleven!
Not knowing how the icing on these is supposed to look, I kind of like the “blotchy” tops. Then again, I liked the chocolate all melted together the other day as well. Maybe I’m just a fan of ooey-gooey-ness in my baked goods.
