This is a "healthy-ish" quick bread made with whole wheat flour, applesauce, flaxseed meal and honey. It makes a perfect breakfast treat or a not-too-sweet afternoon snack. I make it as mini loaves so that I can wrap and freeze or give away, but it can also be made as one large loaf.

Texture and Flavor
Because it's lower in fat and sugar, the texture is a little different. It's very moist and slightly flaky. With maple syrup, it's a little less flaky. Feel free to spice it up with whatever you like! With honey, it has a pretty good honey flavor and with maple syrup you get the maple, so you can stick with just a modest amount of cinnamon or really crank up the spices if that's your thing.
Also, the walnuts are optional but really add some dimension to the bread. You can put them only on top or throw a handful into the batter if you like nuts. I kept the nuts to a minimum because I was experimenting with how low I could get the calories.
Low Calorie Version
One ingredient that knocks a lot of calories out of baked goods is Fiber Gourmet, which I wrote about in a different post. I tried using it in this recipe along with ⅔ cup of zero sugar maple syrup (in place of honey) and it worked perfectly. So if you want to experiment with your Fiber Gourmet, this is a good recipe to start with. This picture shows the texture of the Fiber Gourmet and zero sugar maple syrup version.

Mini Loaf Pans
Mini loaves with a 2-cup capacity are perfect for wrapping, freezing and giving away. However, if you'd rather make it as one loaf, use an 8x4 inch loaf pan and increase the baking time to about 45 minutes.

Applesauce Flax Bread
Ingredients
- 2 cups whole wheat flour or Fiber Gourmet Blend (260 grams)
- ⅓ cup flaxseed meal
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 ⅓ cups unsweetened applesauce (320 grams)
- 3 tablespoons neutral oil
- ⅔ cup honey or maple syrup or keto maple syrup
- ½ teaspoon vanilla extract
- ¼ cup walnuts for sprinkling on top
Instructions
- Preheat oven at 350°F. Grease 4 2-cup (3x5 inch) mini loaf pans and line with parchment paper.
- Whisk together flour, flax, baking powder, baking soda, salt and cinnamon. Set aside.
- In a separate bowl, whisk together applesauce, oil, honey or maple syrup and vanilla.
- Add applesauce mixture to flour mixture and stir until fully mixed.
- Scrape into the loaf pans. Sprinkle walnuts over the top of each loaf.
- Bake loaves for about 30 to 35 minutes or until the edges are very brown.
- Let cool for about 20 minutes before loosening from pan. Remove from pan and let cool completely before slicing.
- Makes 4 loaves that weigh about 7 oz each
