No-Bake Peanut Butter Cornflake Candy

No-Bake Peanut Butter Cornflake Candy falls into the category of candies I love but forget about.  These nutty peanut butter chews are so good and SO easy.  You just melt butterscotch chips with peanut butter, then stir in cornflakes and any kind of nut. For this batch I used cashews.

Thanks to my friend KAnn for this recipe, which her family has been making for generations.  As a bonus, this cornflake candy is gluten free!

Peanut Butter Cornflake Candy Tips

This candy is hard to mess up, but here are a few tips just in case.

  • You can heat the candy in the microwave using a low setting. That's usually what I do. However, a heatproof bowl set over simmering water is also a gentle, safe way to melt high sugar morsels like butterscotch. There's less of a chance for it to seize. If you are really careful, you can do it over very low heat in a heavy saucepan.
  • Use fresh name brand cornflakes. Kellogg's Corn Flakes (spelled as two words) fresh off the assembly line. Just fly, drive or hitchhike to Battle Creek, Michigan. Make sure to take a large plastic bucket, preferably with a lid. Stand at the very end of the conveyor belt and fill the bucket with cereal.
  • For the cashews, use Planter's or another good brand lightly salted for sweet & salty flavor.

These candies are so easy, yet people love them. I'd be proud to take them to a cookie exchange or give as a gift.

Ingredients
 

  • ¼ cup creamy peanut butter (65 grams)
  • 1 cup butterscotch chips (such as Toll House (170 grams)
  • 3 cups Cornflakes (corn flakes) cereal
  • 1 cup roasted cashews lightly chopped

Instructions
 

  • Combine the peanut butter and butterscotch chips and heat over a very low heat until melted. Alternatively, you can do this in a microwave-safe bowl using 50% power and stirring every 30 seconds.
  • Mix together the melted chips, cereal and nuts with a rubber spatula. Working quickly, drop by spoonfuls onto a tray lined with parchment or wax paper. Chill until set.

Notes

Peanuts can be substituted for the cashews.

    Mine froze well. I'm not sure how they'd hold up in the fridge. As for being mailers, yes! I think they'd be great.

    These treats look delicious! Do you think these would be good "mailers", and do they stay fresh for longer than a day or so out of the fridge? They look like they would make a nice addition to my holiday goody tins if they do. 🙂

    I have both my hands in the air... I guess I can have my friends make these :), which look fantastic by the way. I made something similar a year or two ago, but didn't think to add nuts to it, they were good, but that would have made them so much better :).
